Dr. Metz Pumpkin Seed Oil is cold-pressed directly from the green seeds of the highly valued Styrian oil pumpkin (also known as the medicinal pumpkin). We do not use the traditional method of salting and roasting so we can benefit from the valuable nutrients. Therefore the oil preserves its unique fresh and nutty taste and all of its vital substances.
Our pumpkin seed oil is extracted with particular care
In traditional production, pumpkin seeds are ground to a paste with water and salt, roasted and then pressed. Apart from the characteristic flavourings, unwanted additional substances can also develop and valuable nutrients can be lost.
Immediate cold-pressing is more suitable for extracting the pumpkin seed oil gently, even if the oil yield is lower.
The light green colour of our pumpkin seed oil comes from the chlorophyll in the seeds. The reddish sheen is a result of the carotenoids and is evidence of the careful treatment, as the carotenoids in the pumpkin are particularly heat-sensitive. Oil from roasted seeds is therefore always dark green to brown in colour.
