Sweet lupin burgers
(makes 12)
125 g sweet lupin flour
250 ml vegetable stock
1 onion
1 garlic clove
1 egg
Thyme, oregano, salt and pepper
Oil to fry
Pour the hot vegetable stock over the sweet lupin flour and leave to cool for a few minutes. Add peeled and finely chopped onion and garlic clove, egg and herbs and mix together well with your hands. Make 12 small flat burgers and fry in hot oil on both sides.
Serve with a fresh salad.
Tip:
Vegetables left over from the previous day such as ratatouille can be chopped and mixed into the mixture as a tasty alternative. Italian style: mix 125 g chopped leaf spinach and raisins (according to taste) into the mixture and then fry.
The burgers can also be eaten cold the next day.
